Roast????10 POINTS!?
Get a roasting pan that has a rack - if you don't have a rack make a halo out of aluminum foil and place the roast on that fat side up. Season the roast with salt and pepper - put water in the pan - about 2 inches should be enough. Set oven to 350 Degree F. Make a tent out of another piece of fail and place loosely on top of roast. Roast for approx 30 minutes per pound for medium - removing the foil tent for the last 15 to 30 minutes. Remove roast to a large plate cover with the foil tent to rest for about 20 minutes. Use the pan juices for a sauce. Carve the roast and enjoy
